My 2 cents,
Appropriate width of lab workstations depends in part on whether or not
you're hoping to be able to allow students to use books and paper as well
as the computers. If you'd like that option, I'd consider 40 inches (about
1 meter) the minimum width.
In addition to allowing students to use books and papers more easily,
greater width makes the use of larger monitors more practical, and makes
pair- and group-work more inviting.
Finally, getting fewer computers into your available space sometimes makes
it easier to afford adequate and up-to-date software and to upgrade or
replace hardware on a more regular basis.
