Ditto will help with this. It's what I use to deal with creating and 
extracting zip archives (that need resource forks).

man ditto

Example:
ditto -c -k -rsrc ~/Desktop/Keith/Penton-250-009.jpg ~/Desktop/Keith/Penton.zip
