Nobody seems to have mentioned just {x,y}:

set _r1 to {foo:1, bar:"hello"}
set _r2 to {foo:2, bar:"Goodbye"}
set _list to {_r1, _r2}
    --=> {{foo:1, bar:"hello"}, {foo:2, bar:"Goodbye"}}
set end of _list to {foo:3, bar:"vale"}
_list
    --=> {{foo:1, bar:"hello"}, {foo:2, bar:"Goodbye"}, {foo:3, bar:"vale"}}
