Take a look at Audiocorder (free testdrive, $20 shareware)

I've used it to make recordings from vinyl playback, radio shows, etc. 
and their web site says you can record phone conversations... Don't know 
about scriptability, but it's pretty easy to use otherwise... (looks like 
I might need an upgrade!)
