I just stumbled upon the BuzziCockpit from BuzziSpace (http://www.buzzispace.com/products/buzzicockpit,http://www.buzzispace.com/products/buzzicockpit/images_custom).  I thought it might be of some interest to you depending on the price point; I have not asked for a quote.  At ~17lbs they might not be the easiest things to move around for some instructors, but they would allow you to buy more modern/open/flexible tables while retaining the option to create ad hoc carrels as needed.  The fabric looks like it would be good for sound dampening as well.
