You might want to contact your Apple rep and ask if they would offer a workshop tailored to language teaching/learning with iPads. Their general iPad workshops for educators are pretty good, so if you consult a bit with them on the facets of language teaching your faculty are most likely to want to deploy with the iPad, they can probably come up with something pretty decent.
