Great idea. While I'm not available to contribute directly to the project, here's a suggestion:

Syntax Untangler is a language-teaching Web application that offers a kinetic, motion-focused interface to get players to interact with short texts to recognize any sort of structure that you want to teach. Currently it relies on just a standard mouse, but the idea of using Kinect or other motion-sensing sensors for player input seems potentially powerful for better student engagement.
