A few weeks ago, I asked about the distribution of griddles (with one example of a photo here: http://i.imgur.com/7NvTaex.jpg).

A colleague, John Younger, has sent me a photo of a modern(ish) steel comparandum, which I've posted here: http://i.imgur.com/inACCef.jpg. Apparently, it belonged to the grandmother of his landlady on Crete. Unfortunately, the company that manufactured it no longer does so. So my question is for those of you who might have run into this type of pan somewhere in your lives or travels: what's it used for? Is there a stated rationale for the indentations?
