Hi Lee,
I don't have a POS system, but I have developed a Medications database for a summer camp which uses touch screens (and keyboards) for dispensing medications, logging Infirmary visits, scheduling appointments, managing prescriptions, medical conditions and allergies, etc.
One of the biggest problems is eliminating scroll bars from fields and portals - they are simply too small to touch accurately. Other than that, the touch screens are great.
However, we have not eliminated the use of the mouse in all areas, as that was not our objective.
