You don’t have to use the context menu which is indeed cumbersome as you say. It’s easier to use *Get Info* in Finder and then from the "Open with:" choose the application that should open the file. After having done that this particular file will always be opened with the application you chose and to all other files with the same ending your default choice applies. 

I use MPlayer OSX Extended to open and play videos, including videos with the ending .wmv. In very rare cases .wmv files cannot be opened with MPlayer OSX Extended for some reason. In such cases I select the file in Finder, Get Info > VLC. From now on this .wmv file will be opened with VLC, all other .wmv files will be opened with MPlayer OSX Extended.
