Just wanted to thank Craig and others who suggested the problem it  
might be a font issue.
That was indeed the problem.

Lest anyone else have the same problem, here was the solution:

Delete the fonts that were not showing up. In our case, Arial...all  
types... and Courier.
Start machine from an OSX Disk and run Disk Utility Repair Permissions.
Reinstall Fonts.
