One doesn't, that is a limitation of the feature.

If you need something less constrained, might I suggest one of the many fine plug-ins available, most of which have sample files that provide you with basic functionality to send/receive emails and manage multiple attachments. We used mail.it in our fmSpark solution, but the plug-ins from CNS and 360Works are every bit as good.
