As an online language lab provider to many thousands of institutions and I am often asked this question. 
It's hard to recommend one particular microphone because every setup is different. You will see what I mean from a comment I had today from a user with various different labs setups saying:
We have had a lot of trouble getting any USB microphone to work reliably with Macs. These issues are also completely arbitrary…as sometimes the Logitech microphones we have work with one Mac but not with another. We have found though, that with the Apple earbuds with microphone, all microphone problems with Macs have been eliminated. So I am guessing that with Macs the more people can stick with the default microphone the better. We have been able to get the Logitech headsets to work reliably with both PCs and Chromebooks.
Your best bet is to ask someone who has a similar setup to your own.
It's also perhaps worth bearing in mind the likely proliferation of lab usage on mobile devices which are less reliant on peripherals.
