Andrew,
Have you looked at the Verb tables with whiteboards from Steelcase (http://www.steelcase.com/en/products/category/educational/technology-visual/verbwhiteboard/pages/overview.aspx).
We've put them in 3 recently remodeled classrooms (including the venerable language lab) and they've worked out great -- mostly as hi-touch display devices, but also as privacy shields for testing, classroom recording, pair practice, etc. When not in use, they just hang at the end of the table.
