You might want to take a look at the sample IPAs on the CARLA Assessment website -
http://www.carla.umn.edu/assessment/vac/CreateUnit/e_1.html

There is a bit there under "Process" (in the nav at the left) about Backwards Design, but it needs to be fleshed out - coming in the near future!

There are tons of things you could do with presentational mode and technology -
writing - in blogs and wikis
speaking - try Voki, VoiceThread, AudioBoo, Vocaroo, there are many more online tools!!
And for activities - anything that you would have your students say in class but now you are not limited to the classroom - be creative!
