1st, I would recommend the fastest 27" iMac rather than  the "latest"    MacPro because you can connect Thunderbolt external drives to the latest iMacs. Thunderbolt drives read and write data multiple times faster than eSata, Firewire 800, or USB 3.0 drives, a real plus when working with HD materials, for example, during rendering. You do not have to sacrifice sustainability entirely as you can use your " old" 3TB Hitachi drive for extra backup.

2nd, give that iMac 16 GB of RAM

3rd, upgrade to FCP X. It will take some getting used to as the difference to FCE4/FCP7 in the user interface is quite radical. But FCP X takes maximum advantage of the processor as it exchanges data on a 64 bit wide path (FCE and FCP7 never made it past 32 bit)
