I've had good luck with the JVC "On Stage II" -- it is low-profile (a circle lying flat) and very stable, and has fantastic audio output. It's light-weight enough to carry with you. You can use it as a dock, for charging and/or syncing, but what's really useful in the classroom is that the "II" version has a remote control. As for choosing an iPod recorder, I like the Belkin TuneTalk Stereo because 1) it's stereo and you can record dialogues nicely, 2) you can attach a separate mic to it, and 3) you can also plug it into any audio source as a line-in, to digitize audio from other sources, like a radio or tape deck. This mic has worked well recording lectures clearly, as well. I also use Apple's Camera Connector, which lets me plug in a digital camera and transfer photos into the iPod via USB. This is great if you've given an assignment to photograph objects/scenes to discuss back in class, because you can collect copies to a central location on the fly without even using a computer -- this is great for ELL, but also very handy if you are abroad with a student group and want to travel light.
