We use the Califone, 3066AV headset/mic.  Good quality.  Ugly (and thus
less likely to be stolen).  These work well for us with Audacity.

Earlier there were several postings that recommended Audacity for
recording
students' language production.  However, I don't recall any particular
microphone being mentioned for making the recordings.  What kind of
microphone is being used by those of you who have Audacity in your
labs?
