I have been using a very simple HyperCard stack to control both video and
audio files.  Although I can't program to skip back to the beginning of a
word or phrase, I can set it to go back a fixed amount of time.  I think I
have it set for three seconds, and multiple clicks will take you back
multiples of three seconds.  My students find this works for them.

Since HyperCard uses QuickTime, the students also can use the slider bar
for gross movements within the file
