Hi Anthony,
Sanako makes Lab300 which is the hard-wired audio, plus IP-based control.
Study1200 is all IP-based. The names are confusing!
IALLT.org has the DLLS publication which should walk you through the comparative
systems that are out there. It was done in 2007, but is undergoing review this

Yes, Tandberg makes the Lab 300 which is software + hardware (cables between the
student stations and the instructor console, where there is a big board they
plug into, controlled by the instructor software). All the audio functions are
there. The instructor can look at all the student screens and see who is playing
Solitaire. You can also use it to distribute the instructor screen or a selected
student screen to all the computers, as well as audio. (Also video but that
takes extra cables and $$.)

IALLT's Digital Language Lab Solutions volume sounds like something  
you might want if there are any left.  You can find it at http:// 
www.iallt.org.  There will be a successor volume to this one that  
will combine the DLLS with the previous Language Center Design Kit.   
While underway that is not yet finished.
