For this specific case it seems to me that the best way to accomplish the
reworking of that specific subtitle set could happen one of two ways:

1. If the film is on VHS you would have to digitize the film and then use a
program like Final Cut Express (or the full Final Cut suite if you have it)
and place a blank bar over the original subtitle, with your desired subtitle
over it, then export it to DVD or VHS again.

2. If the film is on DVD you may be able to extract the DVD files and edit
the subtitle track, then remaster the DVD.

Either way, as the previous poster said, it will probably require a bit of work.
