If we need subtitles for something ripped from DVD we play it on a  
DVD player with subtitles turned on in the DVD disk menu, outputting  
S-Video and audio to a digital converter box (analog in, digital  
out). Ours is an old Sony Media Converter (DVMC-DA2), but the Dazzle  
Hollywood DV Bridge does the same. From that box we output DV via  
FireWire and capture in iMovie or Final Cut and edit as needed. We  
then export scenes as H264 video. The capture happens in realtime.  
The compression takes longer. If you have a dedicated station, this  
is really an easy process and much faster and more reliable than  
ripping tracks and burning.
