Here at CELOP, we've been using Plantronics' USB headsets (DSP-500) for 
three or four years with very good results.  I believe these headsets 
incorporate all the features you are looking for, offer some level of 
isolation with padded earpieces, and they have proven to be surprisingly 
durable.  We use them with eMacs, but I've also used  them with a variety of 
other Macs (PowerMacs, iBooks, etc) off and on as well.  They list for some 
obscene price ($120?) but are available for MUCH cheaper on Amazon (>$50).  
We've also gotten CDW, our primary tech. supplier, to meet or beat Amazon's 
price from time to time.
