We are using a Marantz PMD670, which records on a compact flash  
card.  The recordings then can be transfered  via USB to a computer  
or through a card reader.  These files can be edited with ease on any  
audio program, such as Audacity.
The sound quality is excellent and our faculty love the user friendly  
controls, which resemble those on an old fashion tape player.  It's  
not small, but portable enough to tape lectures, presentations, etc.   
We have also used it as the audio recording device while videotaping  
performances.
