Currently you cannot set the actual language.

That why you can use the multilingual language option, you will have  
more than English and French.

I should be able to add this in XSpell, but this will be only  
available to your scripts, ie the settings of Mail or TextEdit (which  
is common in term of spell checker) will not be affected. I think  
that doing that is a bit more complicated.
