As far as I know this requires that the user has Acrobat Pro. Nothing you
can do when creating your documents can allow for them to do this. You can
do PDF forms that can be filled out on a users local machine and have the
data saved to a server on your end or emailed to you, if you have the
right software installed on your web server, however, I've never actually
done that.
