Hello Sue, 
A quick response on my behalf since we are not using Sanako but Sony
Virtuoso and Soloist.
These are generalities about introducing a new system :
I guess your teachers' adapation to the new system really depends on the
amount of training and immediate support (reassurance) you are giving
them during their class in the early weeks of the year.
Some are excited, some are reluctant, some are not really sure;
reluctance is generally linked to their lack of confidence with using
new equipment and it is normal. Therefore their adaptation really comes
down to how they are guided through the new procedures.
Our computer classroom was implemented earlier this year and I have
provided constant support to teachers and students in/during the class
for the first 2 months, depending on teachers requests and until they
felt they could cope on their own. It worked really well and the
response was extremely positive. (This means that the support person
needs to allocate support time as a priority)
Teachers are now constantly learning new ways of using the lab software
but the very first steps was to adapt the way they were using the
analogue lab to the new system without too much interference with their
former teaching techniques and resources. I wrote a guide/instruction
notes to using the equipment but they seldom look at it and rather call
me for help. The more eager teachers have also come in their own time to
try new stuff in the room. 
Now that they are ready for more, and that the year is almost over, I am
about to gather teachers across our language schools who are interested
in CALL to provide regular thus broader training sessions involving a
wide range applications and techniques (introduction to the dos and
don'ts with using common applications like powerpoint, the internet,
word and language software in the classroom, then more techniques with
Virtuoso and Soloist, and finally CMCs - blogs, podcast and discussion
forums through Blackboard, I also would like to put an emphasis on
independent learning as well, etc..)  
Most students were excited about using new equipment and if some felt
anxious in the beginning (particulary for oral tests) it was linked to
the fact that the teachers were not confident about using the software.
The situation eased greatly at the end of the term.

As a conclusion, I would suggest that you work closely with your
teachers in the early days. Find/ suggest ways they might be interested
in using the equipment in relation to their course delivery. It involves
their course contents, methodology and personnality, I am working on a
case by case basis (and it is never ending for tutors come and go, and
our facilites can only accommodate a limited number of classes in the
week).

I'd like to hear from people who have adopted Sanako as their lab system
and have been using it for awhile.  Have your instructors adapted to it
quickly? 
Has the use of the system boosted your lab attendance?  Is the whole
system being fully utilized, or are only parts of it being used? If so,
which parts? 
Thoughts?
