Try Audacity.  It's made for a variety of platforms (Windows, Mac 9 & X,
Linux/Unix), and best of all, is freeware.  A major plus is that you can
record additional tracks while listening to existing ones.

Another alternative I've really liked for digitizing and editing audio, but
which has a shareware fee, is Martin Hairer's Amadeus for Mac OS X.  Write
to him for a site license quote -- I thought he was very reasonable, and
included allowing students at the school to have their own registered copies
for their own computers.  It has lots of great features, and will save in
more formats, including the newest used at the iTunes store.  I like the
sound de-noising tools myself, which I've used to scrub up some things I've
transferred to digital from old cassette tapes which amazing results.
