Hi again, Laura, and everybody else;
Word, according to M$, does NOT officially support Chinese.  That said, if you register Word (or any other of the Office apps) as a Japanese app, it should work with (almost) no problem.  Apple used to have a language register program, but now the only one I know of is included with Office X.

1.  Go to /Applications/Microsoft Office X/Utilities/Microsoft Language Register/ and you will find the application Microsoft Language Register.  Double-click it and it will give you  instructions.
2.  After running this, additional double-byte tools will be available that weren't before, such as Phonetic Guide, Combine Characters, and Enclose Characters which can be found under the Format menu, and also added to toolbars.  But most importantly, the spacing problem is solved.  
3.  One drawback is that now some menu items and dialog box text will appear in Japanese.  The kanji generally isn't a problem for Chinese users (I don't know where this puts Korean users...), but you may need to teach a bit of kana to them...
