As far as I know, OSX uses sendmail and qmail so there shouldn't be too
many problems with the mail server. I'm running them on a linux box
right now and a good friend of mine uses OSX. The only issue which he
had (so did I) is that sendmail is setup to prevent mail relaying (and
spamming) and requires that the user authenticate by checking email
before sending. Just tell your users to check their mail before they
try to send some. I was talking him with it about it today and he says
that there haven't been any other issues. (sendmail changes made with
webmin didn't last either was the other - so OSX must override webmin in
this case).
