I don't know what sound board or software you're using, but since most systems
now use a stereo microphone jack, the simplest way to do this would be to
construct a junction box which allows each student to record on only one channel
of the stereo.  You woud have to adjust your playback to listen to only the left
or right channel at one time, but other than that, it should work fine (although
it would be somewhat archaic).
