I don't know of any Word-specific solutions (though I'm sure there's
something), but if you're interested in a web-based solution you could try
the GlossMaker at http://lang.swarthmore.edu/makers/index.htm
to annotate texts.
There might be some encoding and browser issues you'll have to face, but
the CJK version of the GlossMaker is friendlier than the original to
non-western encoding schemes (that is located at
http://lang.swarthmore.edu/cjkgloss/cjkglossmaker.htm )
Many of the other exercises that you can create through this site are very
CJK-friendly so this might offer possibilities for other types of exercises
as well as glossed texts.
