Just put the font name, e.g.
Hiragino Mincho Pro
or its full menu path
:Format:Font:Hiragino Mincho Pro
or the full menu path together with Menu command
Menu ':Format:Font:Hiragino Mincho Pro'
Alternatively, you can use
Set Font Name 'Hiragino Mincho Pro'
All those commands apply Hiragino Mincho Pro on selected texts.

You can reverse the selections using ':Edit:Select:Invert Selection'. So, if your document consists solely of English and Japanese, the following will do the job (I don't know if the find expression fits your way of writing Japanese).
