Hi Marcel,
This is what I would do if I were in your shoes before proceeding with  
any decisions:

1) Talk to the IT person on your campus who is in charge of your  
ITunes U system.  Verify that they can set up the system to restrict  
access to only those students registered in a course (and not to the  
student body at large) and verify that they have a system in place to  
allow students that add/drop to be removed/added automatically to the  
ITunesU course.
2) Contact publishers to get copyright permission to distribute to  
students through ITunesU given the parameters set by your IT  
personnel.  Cengage, for instance, has an online form for this: 
http://www.cengage.com/permissions/ 
.  That can give you a ballpark of the kind of information you may  
need to get from IT before putting in the requests.
3) Get your purchasing department involved in permissions process.  I  
don't know UMW, but at many institutions, only purchasing has the  
right to enter a legal contract with a vendor even when permission to  
use materials is free.  For us, as a State school, purchasing must be  
involved to verify that the wording of the contract is in fitting with  
state regulations (e.g., assumption of risk).  They should also be  
able to give you some guidance in how the university's contract with  
iTunesU fits with the permissions contracts with the publishers.
