There is a free tool called Audio Recorder for the Mac that can be downloaded at
http://versiontracker.com/dyn/moreinfo/macosx/17392

I've used it a couple of times for small projects, but not extensively.  It records directly to either .acc or .mp3

COMMENT: PCs have a free recording tool.  Macs should too if they 
want to keep their reputation as the better platform for multimedia.
