Gues what, folks?! One of our senior lecturers in French, along with 
her talented computer programmer husband, has developed just what 
you're looking for. Please see the message she forwarded to our 
Berkeley Language Center listserv:

Language instructors,

This is to let you know that information on "LangLab" is up on our
website at http://www.elanglab.com/

LangLab is a software that emulates the functions of the "old"
audio-lab --and more.
It allows the instructor to monitor students' lab work in real time
(like the old audio-lab) and also to go back, listen, and add
comments to individual students' work afterwards.

The client and monitor modules are currently installed in 135
Dwinelle, and I have been using them all semester in my French
Phonetics and Listening Comprehension course.
