Tim,
In the Send Mail step, I have tried it both ways. That is, with a calculation in the script and a reference to a stored calculation field & using a variable. And, as I mentioned, I tried using the simple Starter Solution. BTW, which update version of 11 are you using, are you operating in Lion?

Does it work for you?

First, it is not an Address Book issue as none of these folks are in the Address Book.

I have tried to concatenate a name & and email address in various ways.
Including among others;

TableOccurence::Full name & " <" & TableOccurence::Email & ">"

TableOccurence::Full name & GetAsText ( " <" ) & TableOccurence::Email & GetAsText ( ">" )

TableOccurence::Full name & " " & Char ( 60 ) & TableOccurence::Email & Char ( 62 )

Quote ( TableOccurence::Full name ) & " " & Char ( 60 ) & TableOccurence::Email & Char ( 62 )

TableOccurence::Email  & " (" & TableOccurence::Full name  & ")"

[As I said, with everything else being equal, including the Apple Mail program, these all work in FMP 10 but not FMP 11]

Interestingly, if I try to escape the < > characters with a back slash like this;
TableOccurence::Full name & " \<" & TableOccurence::Email & "\>"

The result in Apple Mail looks like this;
Joe Blow \<[log in to unmask]\>

I just tried;
Quote ( TableOccurence::Email  & " (" & TableOccurence::Full name  & ")" )

and this;

Quote ( TableOccurence:: Full name & " <" & TableOccurence:Email & ">" )

and they both WORKED!

Unfortunately, as discovered by this fellow (http://forums.filemaker.com/posts/7597d69cf3) using the Quote function adds literal quotes around the whole name + address on the Windows platform. i.e. "Joe Blow <[log in to unmask]>"  I am not sure if it will send that way as I haven't set up my email account on the Windows platform.

Most puzzling is why it seems to work for Tim, TSGal, and maybe Beverly.
